Super Bowl LII: It's all about the food

Let me begin by saying that I hope this is the least watched Super Bowl of all time. I dislike both teams, the commercials in past years have been lame and I'm all around down on the NFL these days. That being said, yes, we ARE having people over for a Super Bowl "party." LOL

Because I hate to break it to you, Tom Brady, but there are more chicken wing fans than individuals who want to see you win another title! According to the National Chicken Council, Americans will consume 1.25 billion chicken wings this weekend. Also on America's menu: 11 million pounds of chips, 4 million pounds of pretzels, 2.5 million pounds of nuts, 8 million pounds of guacamole, and 50 million cases of beer. Additionally, Super Bowl Sunday is the 2nd biggest grilling day of the year. (What's number 1? Think fireworks and patriotism.)

So it's only natural that I enjoy taking advantage of the occasion to try out some new dishes on a captive audience. From the FCI (Fine Cooking Initiative), I'm serving up

Haven't decided on a sweet yet...any suggestions? And I'm not serving wings but I think I'll do a twist on the Buffalo classic with the following recipe from a famous NYC restaurant.

Red wine + Chocolate

Could there be a better match made in heaven? I mean seriously. Forget about coffee with dessert—I adore dark chocolate with a glass of red wine or port. So why not combine the two? Have you tried Red Wine Hot Chocolate?!

I made a batch for Boxing Day and it was a straight-up treat. So rich and creamy and can I say it? Sexy. This is the perfect beverage to serve your sweetheart after dinner this week. And according to our Dallas forecast, Tuesday (Valentine’s Day) has 100% chance of rain so this lovely, warm drink will make your toes all cozy too.

Red Wine Hot Chocolate

Serves 4

2.5 ounces bittersweet chocolate chips

1 tablespoon unsweetened cocoa powder

1 tablespoon packed brown sugar

1/8 teaspoon ground cinnamon

2 cups whole milk

Pinch of salt

3/4 cup fruity red wine, such as Merlot, Shiraz, or Zinfandel

Whisk the chocolate, cocoa powder, sugar, and cinnamon together in a medium saucepan. Add the milk and bring to a simmer over medium heat, whisking occasionally, until hot and smooth, about 5 minutes. Stir in the salt.

Remove from the heat and add the wine. Divide among 4 small glasses or mugs, (or 2 large!) garnish with a cinnamon stick and a dusting of cocoa powder, if desired, and serve. (recipe adapted from thekitchn.com)

Speaking of romantic meals, my husband and I don’t really go out to dinner for Valentine’s Day. The crowds are crazy, service is often sub-par and the food is predictable. We like to cook dinner together on nights when all the other couples are struggling to get out on the streets . One year we made lobster risotto and some seared sea scallops with champagne-butter sauce. Another time it was Barolo braised short ribs with pimento cheese polenta. This year I’m feeling Italian—because I think it’s romantic. I want to open a nice bottle of chianti and share a big plate of spaghetti & meatballs a la Lady & the Tramp! I’ll snap a picture for y’all… Hope you too have a fun, safe and delicious week!

Italian-American Meatballs & Pasta – the college boy has requested this for one of his “final meals” before heading back to school! My favorite balls and sauce recipe will knock your socks off. Home Sweet Home – tender chicken breast and sweet green peas in a homestyle gravy like Grandma used to make. $26/pie

The joy of adult children

It’s a fact: Mother’s Day is a made-up holiday. An occasion maximized by retailers, greeting card purveyors and florist shops across America.  And for those in the current generation, a weekend whereby you may be made to feel guilty unless you pronounce your undying love for the woman who raised you on some form of social media.
Last year, I reflected here on my own mother and the next week I spoke of my mother-in-law. This year I want to talk about the honor it is to be the mother to my children in our ever-changing landscape.  For Mother’s Day 2016 we had such a nice weekend with 3 out of 4 children and 2 spouses. The guys golfed, the girls shopped, and we all brunched. it was both fun and relaxing.

When the kids are young and growing up in your home, the parents are in charge. We decide where to vacation, what the meal plans will be, how we will celebrate holidays. The year our family discontinued the trips to New Mexico for Christmas with the grandparents, and instead began to celebrate within our own family unit, the children didn’t have a say. But as they mature and create their respective independent families, I can no longer tell them that we expect their company for special events. I must ask or invite them to join us.  This is a good thing.  Because now when they are here, I know they’ve chosen to be with us. The goal is for the grown children to enjoy spending time in our home, now that they have options.

So on occasions like Mother’s Day, when we are trying to take so many pictures (my ever-patient John claims that we take more pictures than any other family on the planet!) I can look around the table and sigh a little with happiness. These amazing, special individuals of whom I am so proud, wanted to be here to share our table and toast me over mimosas. They laughed a lot and teased each other and I couldn’t have had a better day. I so enjoyed those sweet years of baby kisses, and all of the milestones that followed but this is a pretty amazing time. How can it get any better than this?

Bring your "A" game

I AM NOT AN ATHLETE.I just want to make that statement so there’s no confusion. My father was a track star in his youth and he always hoped I’d take up running but unfortunately, I was awkward and very unsure of myself in that arena. Being a daddy’s girl however, I was a sports fan. I knew all of the rules of football and baseball and Dad’s teams (Dallas Cowboys, Los Angeles Dodgers) were my teams. But it is only as an adult that I’ve come to appreciate a very valuable lesson that is learned through participating in sports, and specifically in being a champion.

I think the NCAA tournament, aka March Madness, is a really fun time of year. When our kids were in middle/high school, we would make a copy of the brackets, cut them up in to individual team pieces and then draw each team and assign it to an individual. The drawings were always random except for the #1 and #2 seeds. These were dispersed evenly so each person received a #1 and a #2. Then we would anxiously await the outcome of each game, with me keeping color-coded score and in the end, the winner received bragging rights and money seldom changed hands. The tournament itself really lent excitement to our little pool because in any given year, a #10 seed could come in and knock someone’s precious #2 seed out of the tournament with a single Buzzer Beater!

Invariably you’ll hear sports analysts and experts dub a team “bracket buster” because where they really have no chance to win the entire tournament, quite often they steal the chances to go all the way for a favorite team. (Think Michigan State’s loss to Middle Tennessee!) And I love this about the tournament!! This is where the life lesson comes in – that little nobody team that may have never made it to the tournament suddenly is on the national stage and they make the most of it! They brought their “A” game to play against the big power house teams and they were not going down without a fight. Isn’t that an attitude we should carry with us on an everyday basis? That no matter how small or insignificant the task or interaction may seem we should give it our all? Every day. Every hour. Every minute. It’s a winner’s mentality.

To apply this to lessons for our children: yes, if you have a setback, maybe a bad semester or you didn’t make captain on the drill team, it’s not over, you can strive to do better next time. But how much more difficult is it to make up lost ground when if you give it your all, all the time, you place yourself ahead in the running?

Isn’t it funny the perspective that age brings? I sit here with my epiphany, ready to share it with my college freshman but did I think each course in school mattered enough to put forth my best effort? Ha. Not likely. But I can make it count now.

This week I am taking Tuesday off to spend some time in Round Rock with one of my little birds who is out of the nest, so pickups will be Wednesday and Thursday only. Here comes the bride...isn't she adorable?

Here she is in all her 1st grade glory…missing front teeth, cute little knobbly knees and oh, so eager to please her teacher. So sweet, she charmed every teacher’s classroom that she graced. She charmed us all, even as she bended us to her will, as daughters are known to do! But what a sweet time it’s been, raising this cutie into a beautiful, intelligent, young woman who gives herself tirelessly to the Pediatric ICU at a Round Rock Children’s hospital. It has been rewarding and challenging and in 13 days she will create her own family unit with her heart’s destiny. They will begin their own family traditions and navigate their new life as a young couple in love.
1st day of First grade

It’s a bittersweet time for her father and me. We are ready for another man to be responsible for her (this follows our empty-nester theme!) but I am also a little sad. I can’t believe that 25 years has passed and brought us to this point when she will walk down the aisle, away from our family and into a new one. Of course I know that she is not “leaving” us but that we are adding a son to our fold, but really, they will be their own entity. There are so many things that I wish for them and so many tidbits of advice/wisdom I’d like to share, acquired over 27 years of marriage; some of these things they will have to learn on their own. But here are a couple of nuggets that I like to share with every couple on the cusp of their marriage.

  1. You have to CHOOSE to be in love. Every day. It is a choice, it does not just happen.
  2. The most important job you will ever have is to be a husband or wife. So treat it like it’s important. Don’t take for granted that your spouse will always be there. If you value your employment enough to be on your best behavior, you should treat your marriage the same way.
  3. The marriage is the foundation of your family. Even after children arrive, you should always treat the relationship with your spouse as the most important relationship. A happy family will follow. Children learn their place in the order and they are happiest when Mom and Dad put their marriage first.

So here’s to Jake & Kate – please join me in wishing them all of the success and happiness that being with your soulmate can bring!

So my youngest finally made his college decision – he’ll be putting on his ropers and boot-scootin’ it over to Ft. Worth to join the TCU Horned Frog family!  We are very happy for him and know the school is a good fit.  His sister had a great time (maybe a little too much fun?) there and he has always felt the tug (sibling pressure?) to don the purple himself.  Admittedly, I am happy he will be just 45 minutes away.  Honestly, my biggest emotion this week is relief! With the decision made, it’s just one more thing off the ever growing list of things to accomplish over the coming 6 months.  Up next for this guy: register for classes, attend Frog Camp, sign up for rush, find a dormmate. For me: plan a graduation party, book a summer vacation, find a mother-of-the-bride dress, pack my son off for college, make some more wedding decisions, secure lodging for our family at this ever-growing destination wedding, not have a nervous breakdown.  Wish I could trade lists with him…

This week’s menu features all of my son’s favorites. Of all of my pot pies, the Beef Pot Roast is his absolute choice—I need to make him one this week. He has been a pasta boy since the very beginning and he LOVES meatballs. Caesar salad was the first green salad he enjoyed, thanks in part to the croutons! When we go out to eat, if he feels like soup, it’s always, always French Onion. And the Chocolate Peanut Butter Pie is the one dessert he will hide from his siblings when they are home for holidays…and he’s not usually a selfish guy!  Hope you find something on the menu to make your favorite.  Have a great week! 2015 Menu for Apr 27
